Turkey Blueberry Breakfast Patties

Great Tastes 2011/2012

  • 1 lb (500 g) ground turkey
  • 1 1/2 cup (375 mL) blueberries
  • 1/2 tsp (2 mL) ground sage
  • 1/2 tsp (2 mL) fresh ground black pepper
  • 2 (2) shallots, finely chopped OR 1/4 onion
  • 1 tsp (5 mL) minced garlic
  • 1 (1) egg yolk
  • 1/2 cup (125 mL) breadcrumbs
  • 1 tbsp (15 mL) canola oil

In bowl, combine all ingredients except for canola oil. Mix together well and form 8 thin patties. In a non-stick skillet over medium heat, heat canola oil. Add patties to pan and cook for 2-3 minutes each side until ground turkey is cooked through.
