Spicy Lemon Chicken Bites
Great Tastes 2011/2012
Lemon, garlic and herbs flavour these mini chicken patties.
- 1 lb (500 g) Manitoba ground chicken
- 1/2 cup (125 mL) dry bread crumbs
- 1 none (1) small onion, minced
- 1 clove (1) garlic, finely minced
- 1 tsp (5 mL) salt
- 1 tbsp (15 mL) finely chopped fresh parsley
- 1 tsp (5 mL) EACH dried oregano, dried basil and red pepper flakes
- 1/4 tsp (1 mL) ground white pepper
- zest of 1 lemon
- juice of half a lemon
In a large bowl, combine all ingredients and mix well. Form mixture into 2-inch patties, about 1/4 inch thick.
Place on a greased baking sheet and broil for 6-8 minutes(or until cooked through), turning once.
Stuff into mini pita pockets with tomato, cucumber and a little Dill & Mint Yogurt Sauce.
Variation: Make chicken mixture into meatballs or burger sized patties.
