Pumpkin Bread Pudding
Great Tastes 2011/2012
- 2 cup (500 mL) milk
- 2 cup (500 mL) pure pumpkin
- 1 cup (250 mL) brown sugar, packed
- 2 eggs
- 1 1/2 tsp (7) pumpkin pie spice
- 1 1/2 tsp (7 mL) ground cinnamon
- 1 1/2 tsp (7 mL) vanilla extract
- 10 cup (2.5 L) cubed whole wheat bread
- 1/2 cup (125 mL) golden raisins
- 1 recipe Butterscotch sauce
Preheat oven to 350°F/180°C. In large bowl, whisk milk, pumpkin, brown sugar, eggs, spices and vanilla. Fold in bread cubes. Stir in raisins. Transfer mixture to greased 9×13 inch baking dish. Let stand 15 minutes. Bake 40 minutes or until a toothpick inserted into the centre comes out clean. Serve warm and drizzle with warm butterscotch sauce.
