Pumpkin Bread Pudding

Great Tastes 2011/2012

  • 2 cup (500 mL) milk
  • 2 cup (500 mL) pure pumpkin
  • 1 cup (250 mL) brown sugar, packed
  • 2 eggs
  • 1 1/2 tsp (7) pumpkin pie spice
  • 1 1/2 tsp (7 mL) ground cinnamon
  • 1 1/2 tsp (7 mL) vanilla extract
  • 10 cup (2.5 L) cubed whole wheat bread
  • 1/2 cup (125 mL) golden raisins
  • 1 recipe Butterscotch sauce

 

Preheat oven to 350°F/180°C. In large bowl, whisk milk, pumpkin, brown sugar, eggs, spices and vanilla. Fold in bread cubes. Stir in raisins. Transfer mixture to greased 9×13 inch baking dish. Let stand 15 minutes. Bake 40 minutes or until a toothpick inserted into the centre comes out clean. Serve warm and drizzle with warm butterscotch sauce.
