Fudgey Brownies

Melt-in-your-mouth dessert

  • 1 1/4 cup (300 mL) all purpose flour
  • 1 tsp (5 mL) baking powder
  • 1/2 tsp (2 mL) salt
  • 3/4 cup (175 mL) butter or margarine
  • 3/4 cup (175 mL) cocoa powder
  • 1 cup (250 mL) each, white sugar and packed brown sugar
  • 4 eggs
  • 2 tsp (10 mL) vanilla extract
  • 1 cup (250 mL) chopped walnuts
  • Cooking spray

Preheat the oven to 350F (180C).

Blend together flour, baking powder and salt; set aside. Melt butter over low heat in a large saucepan. Remove from heat. Stir in cocoa. Beat in brown sugar, white sugar, eggs and vanilla. Stir in dry ingredients and walnuts. Spray a 9” square pan (23cm) with cooking spray. Spread batter in pan and bake for 40 minutes . Do not over bake. Cool completely. Spread Fudgey Icing over top.

Fudgey Icing

2 tbsp (30 mL) butter or margarine

1/4 cup (50 mL) cocoa powder

1/2 tsp (2 mL) vanilla

2 cups (500 mL) sifted icing sugar

1/4 cup (50 mL) milk

Melt butter over low heat in a medium saucepan. Remove from heat. Stir in cocoa and vanilla. Stir in icing sugar and milk until smooth and spreadable. Return to heat and cook over low heat for 2 minutes.
