Chicken Patties with Apple and Sage

A lean protein option for breakfast or brunch

  • 1 tart apple like Granny Smith or Pink Lady
  • 1 cup minced onion
  • 2 tsp dried sage (or 2 Tbsp minced fresh sage)
  • 1/4 tsp ground allspice
  • 2 clove garlice, minced
  • 1/2 tsp salt
  • 1 tsp pepper
  • 1/3 cup large flake oatemeal
  • 1 egg, lightly beaten
  • 1 lb ground chicken

Grate apple with skin on and mix with onion, sage, allspice, garlic, salt, pepper, oatmeal and beaten egg.

Stir in ground chicken until very well mixed.

Shape mixture into a log and wrap tightly with plastic wrap.  Refrigerate overnight – chilling helps the patties hold their shape during cooking.

Unwrap log and slice into 8 pieces.  Flatten each piece into a 1/2 inch thick patty.

Pan fry patties in a non-stick skillet for about 6 minutes per side or until a meat thermometer inserted into the center of each patty reads 175F.

Variation:  Put patties on a lightly oiled foil covered baking sheet.  Broil or grill for about 6 minutes per side or until a meat thermometer inserted into the center of each patty reads 175F.
