Mushroom Almond Wild Rice Casserole

Ingredients:

  • 1/4 lb (125 g) bacon, chopped
  • 2 cup (500 mL) sliced fresh mushrooms
  • 1 cup (250 mL) wild rice, rinsed
  • 2 tbsp (25 mL) chopped green onions
  • 1/4 cup (50 mL) white wine (optional)
  • 1/2 cup (125 mL) blanched slivered almonds
  • 3 cup (750 mL) chicken broth

Preparation:

In large frypan over medium-high heat, cook bacon. Add mushrooms, wild rice, green onions and wine. Stir until combined. Reduce heat to medium. Cook, uncovered, 10 minutes, stirring frequently. Add almonds. Mix well. Cook additional 10 minutes. Transfer rice into a 2 quart (2 litre) baking dish. Stir in broth. Cover. Bake at 325ºF (160ºC) 1 1/2 - 2 hours or until rice is tender.
