Chicken Salsa - Great Tastes 2009-10
Ingredients:

1 lb (500 g) boneless skinless chicken

2 tsp (10 mL) Compliments canola oil

1/2 (1/2 ) large red pepper, seeded and sliced

1/2 (1/2 ) large green pepper, seeded and sliced

1 (1 ) clove garlic, minced

1 cup (250 mL) Compliments salsa (mild, medium or hot)

1/3 cup (75 mL) shredded Cheddar cheese
Preparation:
Preheat oven to 400F/200C. Heat oil in a non stick pan. Add chicken and brown on both sides. Transfer chicken to a large shallow cassserole dish. spread vegetables over chicken and top with salsa. Cover the casserole dish and bake in the oven for 30 minutes or until a meat thermometer inserted into the thickest piece reads 170F/77C. Remove from oven, take the lid off and sprinkle cheese over the chicken. Return to the oven and continue baking, uncovered, until the cheese melts. Serve immediately with nacho chips, rice or cornbread.
