Lemon Garlic Chicken - Great Tastes 2009-10
Ingredients:

4 (4 ) cloves garlic

2 tbsp (30 mL) lemon juice

- (- ) zest of 1/2 lemon

2 tbsp (30 mL) Compliments canola oil

1/2 tsp (2 mL) salt

2 tsp (10 mL) dried oregano

4 (4 ) bone-in chicken breasts or legs
Preparation:
Preheat oven to 400F/200C. Puree first 6 ingredients. Remove chicken skin and place chicken breasts, bone side down, on a parchment covered baking sheet. Generously cover chicken with lemon garlic mixture. Roast until a meat thermometer inserted into the thickest piece of chicken reads 170F/77C (about 30 minutes). Remove from oven and let chicken sit at room temperature for 5-6 minutes before serving.
