Chicken Tortellini Soup - Great Tastes 2009-10

Ingredients:

  • 1 tbsp (15 mL) Compliments canola oil
  • 1  (1 ) small onion, chopped
  • 1  (1 ) celery stalk, diced
  • 1  (1 ) carrot, peeled and grated
  • 2  (2 ) cloves garlic, minced
  • 1 tsp (5 mL) dried basil
  • 3 cup (750 mL) chicken stock
  • 1 cup (250 mL) fresh cheese tortellini or ravioli
  • 1/4 cup (50 mL) shredded cabbage
  • 28 oz (796 mL) can Compliments diced tomatoes
  • 3 cup (250 mL) cooked diced chicken

Preparation:

Heat oil in a large saucepan.  Add onion and saute over medium heat 2 minutes.  Add celery, carrot, garlic and basil.  Cook 5 minutes.  Add stock, tortellini, cabbage and tomatoes.  Cover and simmer over low heat until tortellini is cooked as desired.  Add chicken; simmer until heated through.  Season to taste with salt and pepper; serve hot.
