Chicken Tortellini Soup - Great Tastes 2009-10
Ingredients:

1 tbsp (15 mL) Compliments canola oil

1 (1 ) small onion, chopped

1 (1 ) celery stalk, diced

1 (1 ) carrot, peeled and grated

2 (2 ) cloves garlic, minced

1 tsp (5 mL) dried basil

3 cup (750 mL) chicken stock
-
1 cup (250 mL) fresh cheese tortellini or ravioli
-
1/4 cup (50 mL) shredded cabbage
-
28 oz (796 mL) can Compliments diced tomatoes
-
3 cup (250 mL) cooked diced chicken
Preparation:
Heat oil in a large saucepan. Add onion and saute over medium heat 2 minutes. Add celery, carrot, garlic and basil. Cook 5 minutes. Add stock, tortellini, cabbage and tomatoes. Cover and simmer over low heat until tortellini is cooked as desired. Add chicken; simmer until heated through. Season to taste with salt and pepper; serve hot.
