Food Facts: All about Goat (Chevon)
Manitoba chevon is pasture raised without the use of hormones, antibiotics and other feed additives. The majority of young goats (kids) are born between January and June each year. Young goats are raised with their mothers until they're weaned at about 3-5 months of age. They may be sold at this age or raised longer to coincide with a specific holiday. Young Manitoba goats are sold locally or shipped to other parts of Canada.
Fresh Manitoba chevon is sought after by many ethnic groups as their choice of red meat. Live Manitoba chevon is available directly from the producer. Producers selling directly to the public must have their product slaughtered in a licensed and inspected abattoir and usually sell as a whole carcass. Carcass weights will vary as each ethnic group has a different specification or requirement.
The Manitoba goat industry is working to increase the slaughter facilities for goats in our province so that Manitoba chevon will be more readily available in stores and restaurants.
